Classic trout amandine baked to perfection
Preheat oven to 375°F (190°C)
Season trout inside and out with salt and pepper
Dust lightly with flour
Melt 2 tbsp butter in an oven-safe skillet
Brown trout on both sides, about 2 minutes each
Transfer skillet to oven and bake for 12-15 minutes
In a small pan, toast almonds in remaining butter
Add lemon juice to almonds and pour over fish
Garnish with parsley and serve with lemon wedges
