Ingredients

  • 4 arctic char fillets with skin
  • Salt and pepper
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 tbsp fresh tarragon, chopped
  • 2 tbsp fresh chives, chopped
  • 1 tbsp lemon juice

Instructions

    Pat fish dry and season with salt and pepper

    Heat olive oil in a skillet over medium-high heat

    Place fish skin-side down, press gently

  4. 4

    Cook for 5-6 minutes until skin is crispy

    Flip and cook for 2 minutes more

    Remove fish and add butter to pan

  7. 7

    Once melted, add herbs and lemon juice

  8. 8

    Spoon herb butter over fish and serve
