Ingredients

  • 4 salmon fillets (6 oz each)
  • 4 cups water
  • 1 lemon, sliced
  • 1 onion, sliced
  • 2 bay leaves
  • 10 peppercorns
  • 1 cup sour cream
  • 3 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper

Instructions

    Bring water, lemon, onion, bay leaves, and peppercorns to a simmer

    Add salmon and poach gently for 8-10 minutes

    Fish should be just cooked through and tender

    Remove salmon and let drain

    Mix sour cream, dill, lemon juice, and mustard

    Season sauce with salt and pepper

    Serve salmon warm or chilled with dill sauce
