Preheat oven to 450°F (230°C)
Stuff fish cavity with herbs and lemon slices
Mix salt with egg whites until it resembles wet sand
Spread a layer of salt mixture on a baking sheet
Place fish on salt bed
Pack remaining salt mixture over and around fish, sealing completely
Bake for 25-30 minutes (roughly 10 minutes per inch of thickness)
