Ingredients

  • 1 whole fish (3-4 lbs), cleaned and scaled
  • 4 lbs coarse sea salt
  • 4 egg whites
  • Fresh herbs (thyme, rosemary, fennel fronds)
  • 2 lemons, sliced
  • Olive oil for drizzling
  • Lemon wedges for serving

Instructions

    Preheat oven to 450°F (230°C)

    Stuff fish cavity with herbs and lemon slices

  3. 3

    Mix salt with egg whites until it resembles wet sand

    Spread a layer of salt mixture on a baking sheet

    Place fish on salt bed

    Pack remaining salt mixture over and around fish, sealing completely

  7. 7

    Bake for 25-30 minutes (roughly 10 minutes per inch of thickness)

    Crack salt crust at the table, peel away skin, and serve fish with olive oil and lemon
