Ingredients

  • 1 lb white fish fillets, cut into pieces
  • 4 cups fish or chicken stock
  • 3 stalks lemongrass, bruised and cut into pieces
  • 4 kaffir lime leaves
  • 3-inch piece galangal, sliced (or ginger)
  • 5 Thai chilies, crushed
  • 1 cup mushrooms, sliced
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tsp sugar
  • 2 tomatoes, quartered
  • Fresh cilantro
  • Thai basil leaves

Instructions

    Bring stock to a boil in a pot

    Add lemongrass, lime leaves, galangal, and chilies

  3. 3

    Simmer for 10 minutes to infuse flavors

  4. 4

    Add mushrooms and tomatoes, cook for 5 minutes

  5. 5

    Season with fish sauce, lime juice, and sugar

    Add fish pieces and simmer gently for 3-4 minutes

    Don't overcook the fish

    Remove lemongrass and galangal if desired

  9. 9

    Garnish with cilantro and Thai basil

  10. 10

    Serve hot with jasmine rice
